Kid-Approved Fall Favorites from ALDI-What Emma Lucia ate in 1 day (MENU IDEAS)

ALDI FALL FAVORITES- ONE DAY of kid-approved meals with ALDI products

Fall is one of my favorite seasons of the year, but as you can imagine living in Miami, I don't get much of that (although I can't complain about Miami's gorgeous tropical weather either). But, thanks to ALDI fall seasonal products, I can still pretend to have cozy fall days and nights. From comfort foods to fall flavors like apple, cinnamon, and pumpkin, ALDI has unique autumn products at unbeatable prices.


Yes, this fall may look a little different amidst the pandemic. Even grocery shopping can look different (P.S. ALDI offers curbside grocery pick-up and delivery), but we can still celebrate the season. So, to celebrate fall, I'm giving you my favorite registered dietitian and Kid-approved ALDI products, plus meal inspirations for fall! We're bringing Fall to Miami!


A top request I get is to provide real-life meal ideas for kids and toddlers. Especially during the pandemic, I think we (moms) are in dire need of meal inspiration because meals at home have been 24/7.  So I decided why not combine both? My TOP ALDI PRODUCTS FOR FALL and an entire day of kid-approved real-life meals.  


Below are all of my favorite fall products available now, plus I show you how to combine them to make balanced and tasty meals your kids and family will love! Let's get started!


1 DAY KID'S MENU IDEAS


Breakfast: Seeded Pumpkin Bread & Pumpkin Cream Cheese

Breakfast needs to be simple, fast, and nutritious. One of my all-time favorite products is the Seeded Pumpkin Bread.  Made with organic whole wheat flour as the first ingredient, and it provides 3 grams of fiber per slice (yes!).  We topped it off with some happy farms pumpkin cream cheese, chia seeds for added fiber, and healthy fats.  We finished this plate by adding a simple boiled egg for some added protein and a side of sliced strawberries (all ALDI products).  

Snacks: Salted Caramel Hummus & Apples/Pomegranate Trail Mix

In our house, we usually have 2-3 snacks a day. I like to choose a combination of fresh fruit, nuts, whole grains, or yogurt. Pomegranate is one of Emma Lucia's favorite fruit, and it's in season during the fall, but fresh pomegranate can be expensive.  The Superberry Pomegranate trail mix includes pomegranate chocolates, nuts, almonds, and acai, for only $3.45. A fantastic blend of antioxidants, healthy fats, and lots of fiber to keep my girls going.  If you're looking for a sweet snack idea, you will love the sea salt caramel humus. We paired it with some fresh apples, or you can choose some whole-grain crackers as well.


Lunch: Veggie Quinoa Burgers with Sweet Potato Chips

I love this super simple and plant-based lunch. Perfect for a #meatlessmonday meal.  I found these Earth Grown Veggie burgers, and I'm a fan. They come in 2 varieties: Chipotle black bean and Quinoa crunch veggie burger. (We used the air fryer to make them extra crunchy). We accompanied them with a side of Simply Nature Sweet Potato chips (with 2 grams of fiber per serving) and some cheery tomatoes.  A straightforward and fast lunch to prepare.


Dinner: One-Pan Chicken with fall veggies

I love making one-pan meals.  I used Simply Nature organic steamable butternut squash and sweet potatoes (both found in the frozen section) to give this dish a fall flavor.  I also added some apples, Brussels sprouts, and some bacon for additional flavor. The end product was a delicious, crispy sweet chicken with a side of autumn veggies. Check out this other Brussels sprouts on a stick recipe that my daughters absolutely love.

Step 1:Cut all the veggies.

You can use fresh sweet potatoes, but I loved the convenience and price of these steamable bags.  I heated them in the microwave for about 3-5 minutes before putting them in the oven at 425 degrees so they would drain some water.

Step 2:  Add the chicken thighs.

(I marinated them with olive oil, fresh spices-rosemary, thyme, and some red wine vinegar) Mix well with all the veggies and bacon.


Step 3: Bake in oven at 425° for 45min, occasionally stirring to avoid burning.

One-pan dinners are effortless and save tons of time and preparation. If you have never done them, I highly recommend you start now. This is what our meal looked like at the end. I was a little afraid Emma Lucia would not like the veggies, but she ate and devoured them. I love the mix of sweet and salty from the veggies and bacon.
